21 Day Fix Pork Carnitas

Hey everyone!!  So a lot has transpired since the last time I posted, most notable in that list is that I decided to become a Team Beachbody Coach!  I've been thinking about it since I saw the amazing results that are possible with Shakeology and the 21 Day Fix, and during a conversation in a challenge group on Facebook the other day, I decided to go for it!  It has been a very exciting three days since then and I am thrilled to begin building my business.  I can't wait to share everything that I have learned since beginning the program a year ago to support all of you in your goals.  Please always feel free to leave a comment down below or visit my Facebook page or my Beachbody Coach website for more information!  You can also follow me on Instagram @see_sara_run!

Okay, so let's get down to business!  A quick rundown of the 21 Day Fix for those of you who are not familiar - 30 minute workouts once a day, Shakeology (not mandatory but a HUGE plus), and a flexible, portion controlled eating plan that is super simple to follow.  Now that we're all on the same page, here's what's in my crockpot as we speak:



I can't wait to share this with you (and update this post with another picture when it's finished cooking haha)!  Also, have you heard of slow cooker liners?  They're made by Reynolds, the aluminum foil people, and holy moly if they aren't my new favorite thing.  I may never wash my crockpot again. :)  So start out by sticking one of those bad boys in your crockpot so when you're all done you can just dump it in the garbage, wipe out your crockpot with a paper towel, and put it away.  Helloooo easy cleanup, I love you!

Once you've got your liner situated, go ahead and put two cans of Rotel in the bottom.  I used one original and one mild, sometimes those little buggers can be pretty spicy... or I'm just a big baby.  One or the other.

And I spilled all down the front of my crockpot.  It's fine.  Wipe it and move on. :)

Next, you need a bunch of spices!  I buy the no name brand at my local supermarket (unless it's something like ground coriander that of course, I couldn't find, so I had to buy the organic expensive one ;) and they're just as good as the expensive McCormick or whatever else.  Here's what you need:

2 tbsp chili powder (I used half regular and half chipotle chili powder for a little more spice)
1 1/2 tsp ground cumin (I went a little light on the cumin because I find it can be overpowering)
1 tsp ground coriander (basically the ground up seeds of cilantro, yum)
1/2 tsp dried oregano (if you use fresh, start with a small amount, fresh oregano is very potent)
2 tsps onion powder
1 tsp garlic powder (be careful with this guy too, too much garlic is bad news people)
1 tsp salt
1 tsp black pepper

I think it might be traditional to add something like cloves or cinnamon to carnitas, but I am not about that life.  Cloves and cinnamon need to stay in their lane, and that is dessert. :)

Dump all of those lovely spices into a bowl, mix them up with your fingers, and then rub them all over the pork.  Drop the pork on top of the Rotel, put the lid on your crockpot, and cook on high for 4-6 hours or on low for 8-10 hours, or until the pork shreds up easily with two forks.  If you're fighting with the pork to shred it, it's not done, no matter how long it's been cooking, and you will probably end up burning yourself with the hot liquid when the pork finally does pull apart... not that I know from experience or anything. ;)

Depending on what you like, you could serve this in a couple of ways:

Over brown rice, with traditional taco fixins (lettuce, tomato, red onion, shredded cheese, and plain Greek yogurt instead of sour cream, you will not taste a difference I promise) = 1 yellow (rice), 1 red (carnitas, maybe a little more if you use a lot of Greek yogurt on the top), 1/2 to 1 blue (depending on how much cheese you use), 1/2 to 1 green (depending on how much lettuce, tomato, and red onion you use).  If you're like me you'll pop 1 orange container of green olives with pimentos on there too and be happier than a pig in... well, you know.

You can also do what I think I'm going to do tonight and that is dump some of this and some of the fixins I listed above and roll them up into 2 small corn tortillas (about the size of my hand, maybe a little smaller).  Yum.  If you're hoarding your yellow containers (hey, who isn't?), you could also put this over a big salad!

Strep Throat?!

Come on now, ladies and gentlemen.  I haven't had strep throat since I was in first grade and now all of a sudden, I get it twice in three weeks?  This is uncalled for and ridiculous, if you ask me. :)

So I've been on antibiotics and all that good stuff, but I figured it couldn't hurt to help them out a bit so I've been oil pulling with coconut oil (seriously, look it up - coconut oil has so many amazing health benefits), but I also whipped up a nasty little batch of an apple cider vinegar cough remedy I used a while back, because I remember how great it made my throat feel.  Here's the recipe I use:


1/4 teaspoon cayenne
1/4 teaspoon ground ginger (I'm sure you could use fresh ginger if that's all you had)
1 tablespoon apple cider vinegar (I used Bragg's)
2 tablespoons water
1 tablespoon honey


Put all of those ingredients in a container with a water tight lid and shake the crap out of it until it all looks uniform in color.  The spices will settle to the bottom of the container after a while, so be sure to shake it up every time before you use it.  I fill a shot glass half full and knock it back.  It's actually pretty amazing stuff - if you can get past the taste of the ACV... :)

Tonight's Dinner!

So tonight's dinner was Asian meatballs, brown rice, and cauliflower and broccoli.  I realized afterward that the original recipe from Get Fit With Nikki says that 6 meatballs is 1 red container and I only had 4... so I feel a little sad about that. :)  Here's what dinner looked like (which you can also find on my Instagram account - @see_sara_run)...


You can go over to Get Fit With Nikki to see the original recipe, but I made a few changes.  I didn't have scallions, so I used chives from our garden.  I also added a tiny bit of breadcrumbs - not enough to change the container count, but enough to help the meatballs stay together - and garlic and onion powder.  No salt was necessary because of the soy sauce, but I added pepper as always.  I baked them in the oven at 375 degrees for 30 minutes and they were perfect!

Groceries and lunches and meal prep!

I feel like I should be saying "Oh My!" right about now, but I'll refrain. :)

Hello again, friends!  I have absolutely no idea how many of you are reading this but to be perfectly honest, I'm reading it and that's what counts.  So since today is my last official day of Spring Break, I decided to make this grocery shopping/meal prepping day.  After planning to get up early and get a jump on shopping, I accidentally fell back asleep and didn't get to the grocery store until about 11am.  Luckily, I had my boyfriend to help me so things still went pretty quickly.

Here's what I bought:



I tried to give myself some variety with each container so that I wouldn't get bored.  And yes, I am aware that this is going to last me quite a while (I hope!).  Here's the breakdown:

Red (protein):

  • Boneless skinless chicken breasts ($1.99/lb, which is just about the best I can do around here) which I'm putting in the freezer for next week
  • Beef bottom round roast (don't know per pound, but it cost me $18, which nearly made me faint in the middle of the meat department) which I'm going to use for balsamic BBQ beef in the crockpot on Saturday
  • Bubba Turkey Burgers ($8.99 for 8 burgers) which I already used 2 of to meal prep my Cheeseburger Salads (recipe below)
  • 93% lean ground turkey (2 pounds for taco salads tomorrow and 2 pounds for Asian meatballs sometime this week)
  • 2 lbs of frozen shrimp (they're the jumbo size, I think it's 21-30 per pound) which I'll be using for shrimp stir fry later in the week
  • 2% plain Greek yogurt (I got Faye because I think it tastes the best)
  • Low-sodium deli turkey for wraps for lunch
Green (veggies):
  • Broccoli (I'm trying out the bag of precut florets, it was $5.99 for 3 pounds, which was the same price as the regular heads of broccoli)
  • Spinach
  • Romaine lettuce
  • Peppers (green, yellow, orange, and red)
  • Baby carrots
  • Organic grape tomatoes
  • Tomatoes on the vine
  • An absolutely gigantic cucumber
  • Baby bella mushrooms
  • Celery
  • Cilantro (technically, I think cilantro is a free food but whatever, it's produce)
Blue (healthy fats):
  • Roasted garlic hummus
  • Shredded cheese
  • Ultra thin colby jack slices (only 40 calories for one piece of cheese when normally it's like 100?  Sold.)
Purple (fruits):
  • Red grapes (I still have apples, oranges, and bananas from last week, plus frozen pineapple)
Yellow (carbs):
  • Whole wheat pasta (I got rotini and penne)
  • Whole wheat pitas (I already have whole wheat, low carb tortillas for wraps)
  • Boil in a bag brown rice (which is a life saver honestly, because regular brown rice takes like 45 minutes - this takes 8 to 10, so again, SOLD.)
  • Quick cooking oats (I'm not sure what I'm doing with that yet, but I was out so I needed more)
The other random stuff I got is Dijon mustard (for the Dijon vinaigrette from the 21 Day Fix eating plan book), tomato paste and sauce (again, I was out), 4C liquid water enhancer (I got the 1/2 and 1/2 lemonade and iced tea kind, it's sugar free and it's nice every once in a while when you're drinking so much water on this program), and organic extra virgin olive oil.

Holy moly, $214 later I'm finally finished! (My boyfriend got Gatorade too, so that was about $15 of that).  So yowza.  I forgot how expensive food can be when you're following the 21 Day Fix, but this was the first shop to get myself back into gear and that's always the most expensive. 

Okay, now onto the good stuff - I had Chocolate Shakeology for breakfast (yum, I LOVE not having to buy vitamins now that I'm drinking Shakeology!), blended with 1 purple of frozen pineapple, and here's what I had for lunch!


Hellooooooo beautiful natural light!  I had salad and grilled shrimp leftover from a BBQ we had on Friday night so I threw it together with approximately 5 croutons (even though they are my weakness and I wanted a huge handful) and Newman's balsamic vinaigrette.  Yum.

Okay, meal prep now.  This is getting very long, so if you're still reading, thank you!  The only meal prep I'm doing this week is for lunches and I only have 4 days of work this week.  Two days will be cheeseburger salads and the other two will be low sodium turkey on whole wheat wraps with hummus, lettuce, tomato, and red onion.  I got the recipe for the Cheeseburger Salad from Five Wooden Spoons (here's the original post) and it sounds yummy to me!  Here's what I did:


I put 1 total green of romaine and spinach mixed together into each container and topped it with about 1/2 green of chopped carrots, grape tomatoes, and red onion.  Then, I dropped in 1/2 blue of shredded cheddar into each container.  Finally, I put a small silicone cupcake mold into each container and dropped a hardboiled egg into each one (I'll cut those up when I get to work).  In a small ziplock bag, I chopped up 1 cooked Bubba turkey burger (which I'm counting as 1 red), zipped that closed, put it on top of the container, and popped on the lid.  I'm pairing it with the 21 Day Fix Dijon Vinaigrette, but due to copyright concerns, I'm not able to share that exact recipe.  Essentially it's Dijon mustard, vinegar, lemon juice, and olive oil, with some seasonings added in.  I also put 2 teaspoons of honey into the vinaigrette recipe just to cut through the acidity a little bit more.  And just like that, lunch is finished!  As a side note, I'm not making the turkey wraps ahead of time because I don't want them to get soggy.

That's everything I did today, ladies and gentlemen!  Now it's off to relax for a few before I need to cook dinner (marinated chicken breasts, roasted vegetables, and sweet potatoes) and get myself to Zumba for my workout tonight.

The point of no return...

Well ladies and gentlemen, here I am... in a place I honestly never thought I would be.  After losing almost 30 pounds last year and being 8 pounds from my goal weight, I have gained it all back and then some.  Looking back, I thought I had reasons for eating my feelings and not moving my behind, but they seem so insignificant now.  I guess the biggest of those was the loss of my grandmother at the end of September, but thinking about it today I know that she wouldn't want this for me.  I don't want to disappoint her.  And so, here goes nothing once again, for the very last time.

So I'm starting off this journey again and I will be chronicling all of the food I make, the meal preps I do, and all that kind of stuff to help myself remember and to keep myself accountable.  You can also follow along on Instagram (@see_sara_run) where I will be posting tons of crap as well.

For those who are curious, I will be making my own hybrid of 21 Day Fix and my local gym (Retro Fitness is a God send) depending on time constraints and what classes Retro is offering that I'm interested in going to.  I am not a Beachbody coach, but I do love the 21 Day Fix and so it is what I'll be basing my eating on from this point forward.  I've done a couple rounds following it to a T, so if you've got questions send them my way and I'd be happy to share what I've learned!
